I mentioned I would be having black eyed peas for good luck on this first day of the year. With our black eyed peas we had some delicious grits and spiral ham--a Southern inspired lunch which I co-cooked with my brother in law and chef extraordinaire David.
Since we had a Flip video camera near by, we decided to video tape the making of this Red Eye mayonnaise, which we served with the ham. The recipe comes from a magnificent cookbook and is intended as a riff on the traditional red eye gravy, which involves de glazing ham drippings with coffee. This is our interpretation of the Chang & Meehan recipe.
Oh, and for those of you interested in a more muted coffee flavor, just cut the coffee quantity in half.
